Mathias Spoerry — Musician & Sourdough Baker will be our guest chef next November 15th.
Originally trained as a performer of medieval music, Mathias Spoerry spent years exploring the world through sound before settling in the north of Iceland, in the valley of Svarfaðardalur.
While teaching at the music school of Dalvík, he decided to dive into his other passion, baking. Following periods of intensive training and graduation in France, he opened his own artisanal sourdough bakery in 2019: Böggvisbrauð.
Committed to sustainability and nutrition, Mathias mills organic heritage grains on a traditional stone mill for full flavor and nutrients. The sourdough loaves are then slow-fermented and finally baked in a wood-fired oven.
His approach to bread reflects the same curiosity and craftsmanship that also guide his ongoing work as a musician.We will prepare together for this occasion different types of organic flour bread, cookies and pastries!

cocktails & pastries
Welcome to an event about Icelandic wild plants and how to transform them into delicious pastries and drinks. We will present 3 types of pastries paired with its matching cocktail.
We will be teaching in a short workshop our guests how to create the signature cocktails and paired pastries, and then open the evening to tasting all the delicious things we made together.
This event is hosted by Sweet Aurora and Hrafnkell Ingi Gissurarson best bartender 2025.
